Umami and Mushrooms

Ollie Hunter was a MasterChef semi-finalist (joint 4th) in 2013, after which he spent a decade working in hospitality winning some of the top awards for Sustainability and Organic Food either as a restaurant owner or as a consultant. During 2020 he researched sustainable agriculture and realised the importance of the world moving to a more plant based diet. In the same year he met a Mushroom Man in Snowdon (Wales) who showed Ollie how he was growing 150kg of mushrooms a week from 1 container. This sparked of Ollie's imagination to explore the possibilities of using mushrooms as both a protein and an UMAMI source to lead the way to a more plant based world. Ollie founded Lion's Den Mushrooms , a company that creates super delicious umami Sauces, Condiments and Spreads from mushrooms, mainly Lion's Mane and Shiitake) to increase both UMAMI and FLAVOUR in our diets as well as the nutritional benefits. He is also very passionate about teaching people how to cook with mushrooms and plant based foods - and create everyday tasty dishes.
